Like all types of broccoli, even that of the "Roman" variety is not eaten the leaves, but the inflorescences not yet ripe.

It has a light green color and a particular pyramidal structure composed of a series of small spiral rosettes that follow one another with a certain regularity. Furthermore, each rosette is made up of other gradually smaller rosettes. Traditional cauliflowers, on the other hand, have a rounded structure and a tendency to be white.

Roman broccoli is rich in minerals such as magnesium, potassium and manganese, as well as antioxidants such as flavonoids. They also abound in vitamin C in the form of ascorbic acid and carotenoids which provide significant quantities of provitamin A.
