Escarole is a variety of endive that looks like an open-head salad, with smooth or wavy light green leaves. It has a crunchy consistency and a slightly bitter taste and excellent nutritional properties.
Escarole has very little fat and protein, but is rich in water and minerals as well as fiber and vitamins, especially A, C and K. It helps the functioning of the digestive and intestinal systems, prevents cholesterol and its bitter taste counteracts the desire for dessert.
It is sown in the late summer period and is ready to be picked in the autumn; only where the temperature does not drop steeply, the sampling can extend until the end of winter.
